Ingredients (Serves 2):
For the chia pudding base:
¼ cup chia seeds
1 cup unsweetened almond milk
2 scoops vegan protein powder (about 44g protein total)
For the strawberry coconut cream:
¾ cup coconut yogurt
½ cup fresh strawberries
1–2 tablespoons powdered sugar (optional, adjust to taste)
Toppings:
1 banana, sliced
½ cup strawberries, chopped
2 tablespoons coconut whipped cream
1 tablespoon unsweetened coconut shreds
Instructions:
Make the chia pudding:
In a bowl or jar, mix chia seeds, almond milk, and protein powder until fully combined.
Let sit for 5 minutes, stir again, then cover and refrigerate overnight (or at least 4 hours) to thicken.
Blend the strawberry coconut cream:
In a blender, combine coconut yogurt, fresh strawberries, and powdered sugar.
Blend until smooth and creamy. Refrigerate until ready to serve.
Assemble the bowls:
Divide chia pudding into two bowls.
Pour strawberry coconut cream over each.
Top with sliced bananas, strawberries, a dollop of coconut whip, and a sprinkle of shredded coconut.
